
One thing I have learned about myself last year is how much I really enjoy cooking. It definitely is a confidence booster when it is a meal that everyone really enjoys. I am always looking for new recipes to try that more importantly is healthy and easy.
I’m sharing with you five recipes that I recently found that would make for great weekday meals.

Broccoli Cheese Soup: Inspired by the famous Panera Bread broccoli cheddar soup, this is the perfect comfort soup to make for these cold winter days.

20- Minute Lemon Pesto Penne: I’ve made this pasta and it is so simple but really delicious. I love the zesty flavor from the lemon combined with the pesto.

Tortellini Vegetable Soup: This soup has been on my “to make” list for ages. The perfect cold day (or snow day) meal.

Tofu with Thai Peanut Sauce: I love tofu! Once in a while, I like to enjoy a vegetarian meal. I love the sweet and savory flavors of a peanut sauce. This will pair well with some Jasmine rice and a salad.

25 Minute Kung Pao Chicken: This is the recipe I am most excited to try! This is the perfect recipe to spice up your weekday meals. Honestly, my mouth waters while looking at this image. I love a meal that I can whip up that is super tasty and will be done in no time.
