During this social distancing time, my family and I have been exploring new recipes more than ever now that we have the time to do so. Each night each of us takes a turn in the kitchen creating new meals. We have made it fun by turning dinner into a Top Chef competition each week.
I often joke that this quarantine is slowly turning me into Martha Stewart but the reality is that I have been enjoying being more creative in the kitchen and practicing my cooking skills. To be honest, I’ve never been more excited about dinner time at home.
These recipes that we tried have us even more in love with the idea of creating our own gourmet meals without having to spend the $$. I wanted to share these recipes with you in case you are looking for new ways to spice up your dinner rotation.
Crockpot Sun-Dried Penne Alla Vodka: This sauce was so easy to make and didn’t require you to be behind the stove for a long time. It exceeded my expectations and I was so surprised by how simple it is to make. Within this recipe, I did make some substitutions to ingredients. I did not have cans of whole tomatoes so I changed that out for jarred tomato sauce.
Chicken Ramen: My sister-in-law and my brother made this meal. It was so tasty. We found the best fresh Ramen noodles from Whole Foods which I think made a huge difference in flavor. I will say that the most time-consuming part of this dish is the prep work. Once the broth is made I think it is perfect to also store in the fridge for a quick meal.
Fried Chicken and Waffles: My youngest brother chose this as one of his meals and I am so impressed by how it came out. He took the time to hand batter and fry the chicken as well as made homemade Belgian Waffles. This was definitely a perfect meal to break up our traditional dinner meals. We also found that the fried chicken was perfect for creating other dishes too!
Black Bean Burgers: This was the healthiest meal made so far. We were all pleasantly surprised by how flavorful these burgers came out. It was an easy recipe to follow as well! As a side, baked sweet potatoes were made. This meal is perfect if you want to take a day off from eating meat or if you are vegetarian.
